Do I trim the old canes or leave them there? Errr I'm all new to growing!

If they are summer raspberries (cropping in Jun/July), you need to cut down the canes which carried this years crop and leave the new canes to crop next year. The new canes have fresh green stalks and leaves and you can cut down the old ones any time once they have stopped cropping.
if they are autumn fruiting berries, (cropping in Sept/Oct), you can cut all canes down to the ground once they have ceased cropping, and next years crop will arrive on newly grown canes next year.
