I grew yellow ones this year. They don't last very long in the fridge. I use a potato peeler to create thin strips and toss in flour. Sometimes I add chili or paprika and roast on the oven with a little olive oil. They come out crispy. Even my son eats them.

Aha, nice one. I do something similar with courgettes. Potato peeler slice them, little soya sauce, chilli sauce and a touch olive oil and bake till soft. They also fry up nice in a little olive oil with mint and lime juice added at the end. There's some souper soup recipes out there for them as well. Anyone?
